I love the versatility of banana ice cream. My favorite may be mint chip with mint extract & cacao nibs, but this Chocolate Cherry Chunk version I created with Valentine’s Day in mind is a close second. If you’ve never had banana ice cream & think you don’t like bananas, I urge you to eat least give it a try. Freezing the bananas first takes away the strong banana flavor. It provides the perfect creamy base for the add ins.
4 frozen bananas
2-4 Tbsp cacao powder
1/2 cup frozen cherries
Process bananas in food processor until smooth, stopping to scrape down sides as needed. Add cacao powder & process until well incorporated. Lastly, add cherries & pulse until roughly chopped. Serves 2.
